O'boy Oatmeal Cake

This cake was always a favorite in my house growing up and my kids and husband love it now! I claim that it's health food since it has oatmeal in it, so eat as much as you want. :)

Cake:
1 c quick oatmeal
1 1/2 c boiling water
1 cube margarine
1 c granulated sugar
1 c brown sugar
2 eggs
1 1/2 c flour
1/2 tsp cinnamon
1 tsp soda
1/2 tsp salt

Soak oatmeal in water while preparing the rest of the ingredients. Cream margarine with sugars until fluffy. Add beaten eggs, flour, and seasonings. Add oatmeal. Bake at 350 degrees for 35 minutes.

Icing:
1 cube margarine
1/4 c evaporated milk
1/2 c nutmeats
3/4 c brown sugar
1 tsp vanilla
1 c coconut

Bring to boil margarine, sugar, and milk. Remove from heat. Add vanilla, nuts, and coconut. Pour on hot cake.

I love this cake. i think it should be called "The Heart Stopper Cake" because it has a whole lot of fat in it. But oh it is yummy.

I have used applesauce as a substitution for half of the fat and the splenda for half of the sugar. It was really moist and yummy, but I love it with all the fat too. It is my favorite and I would eat the whole thing so I have even halved it.
