Ricotta Filling

I've finally found a recipe for filling for manicotti/lasagna/shells, so I thought I'd share. I've been looking for a good combination of cheese/herbs/creaminess for a while now....EUREKA!!!

mix together:

32oz Ricotta cheese (I really don't like the cottage cheese substitution, especially because ricotta is cheaper where I live, but I'm sure it'd work just fine in this recipe if you run it through the blender).
4oz cream cheese (I use the neufchatel...save some calories where I can)
2 eggs
1 teaspoon italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup Parmesan cheese
