Sheer joy in a pan. So rich and SO easy. Always a hit, no matter where you take them. Also, for variation, use almond or other extracts instead of the mint.
Ingredients:
1 12 oz. bag semi-sweet chocolate chips
1 14-oz can sweetened condensed milk
2 T butter
5-10 drops vanilla
3-8 drops of peppermint oil (this is potent stuff)
Directions:
Put chocolate and butter together in glass bowl and microwave on medium level (half power) until melted. I do this 1 minute at a time. When almost melted, stir until all chips are dissolved. Add sweetened condensed milk and flavorings. Put in a buttered 8" square pan. Cool in the fridge. Cut into little pieces.
Number Of Servings: One. I guess more if you're willing to share.
Preparation Time: 5 minutes? Seriously, it's SO EASY.

These ARE amazing! And their difficultness is not proportionate to their yumminess. Once again, I must know if you are responsible for submitting them to the 148 ward cookbook.
I did have one problem with them: I made them last X-mas for neighbors, thinking I would make them that afternoon and deliver them that night. I actually took DAYS for them to set up all the way. Is that because I used margerine instead of real butter? We delivered them anyway in their gooey state. All I can say is when we returned from X-mas break over a month later, the leftovers will still in a bag on the counter and they were finally set up and tasted perfect.
Yep, I did submit those! Ha! I'm so glad people actually use recipes I submitted.
And yes, margarine just doesn't work for these things. I say spring for the butter. It's usually cheapest at Costco. Ahhh... Costco...
As far as butter vs. margarine: don't ever buy margarine. EVER. Sure, it won't raise your cholesterol as much or clog your arteries as fast, but butter tastes better and is much better to cook with. So forget about eating healthy, and start thinking about eating tasty, that's my motto.
As if I need an EASY SCHMEEZY way to consume delicious chocolate.... =) Perhaps if this stuff were more difficult, I wouldn't eat as much.
