Whoa baby. These are so easy and SO good.
They take a fraction of the time and mess of "real" enchilladas, and you don't have to fret over rolling enchilladas and having the tortilla crack down the middle before you even put it in the pan. Okay, I don't really fret over that, but it does annoy me. And in this recipe, you just layer them! So easy.
Scott and I loved these. Great flavor. All you do is brown the meat. (I used ground turkey) The rest is just opening cans, stiring and layering. Definately adding this to my regular rotation.
