Gourmet Chicken Roll-ups


6 boneless, skinless chicken breasts- thawed. (pound flat between 2 pieces of saran wrap)
Mix together:
2 cups sour cream (I usually use a little less to save on sour cream- it wastes a lot)
juice from 1 lemon
1/4 tsp fresh minced garlic

In a large bowl, marinate the chicken in the sour cream mixture for 1 hour, no longer. Finely crush the contents for a box of Stove Top stuffing (chicken flavor) and pour into another bowl. Spray a 9X9 pan with Pam. Take each chicken breast- scrap off sour cream and coat with bread crumbs. Roll up and put in pan, rolled edge down (Can put a toothpick in to keep together). Drizzle with 1/4 c. melted butter. Bake at 350 degrees for 40 minutes or until tender and cooked through.
