Garlic Fries

If you have ever been to a baseball game and ordered the garlic fries, this is hte healthier version. I got it from Cooking Light. You will love it if you like garlic!

3 lbs baking potatoes, peeled and cut into 1/4 inch strips
4 tsp. vegetable oil
3/4 tsp. salt
Cooking spray
2 Tbsp. butter
8 garlic cloves, minced
2 Tbsp. fresh parsley (I also use dried parsley but only put in 1-2 tsp.)
2 Tbsp. freshly grated parmesan cheese.

Preheat oven to 400. Combine first three ingredients in ziptop bag, tossing to coat. Arrange potatoes in a single layer on baking sheet coated with cooking spray. Bake at 400 for 50 minutes or until potaotes are tender and golden brown, turing after 20 minutes.
PLace butter and garlic in a large non-stick skillet; cook over low heat 2 minutes, stirring constantly. Add potatoes, parsley and cheese to pan; toss to coat. Serve immediately. 6 servings

The high fat version would be fried potatoes instead of baked and then add extra butter and cheese to the pan!
