Mom's Breakfast Dessert

Normally, this would be considered a dessert. But the title has breakfast in it, so it is therefore a-okay to eat it without having eaten anything healthy first.
This recipe is doubled -- halfing it will fill an 8x8 glass dish
1/2 cube butter
2 cups four
2 cups sugar
4 tsp baking powder
4 tsp. cinnamon
1/2 tsp. salt
2 cups milk
1 large can peaches, drained
  1. Melt butter in glass casserole dish in oven, while it is preheating.
  2. Mix dry ingredients.
  3. Add milk and stir to make batter.
  4. Remove casserole dish with melted butter, and pour batter in.
  5. Add drained fruit.
  6. Bake at 375 degrees for 30-40 minutes.

Hey! That's my mom! I like to eat the crispy edges. (But, my husband says that yes, this is more like a dessert than a meal.)

Would this work with other fruits too? Like... say... blueberries? Or strawberries?

Yeah! She is my awesome sister in law. I will definately invite her to be an author! She has a really fun carrot mac n' cheese recipe.

Jen- This recipe is very similar to "dump cake", which totally works in a dutch oven. Try it and give us a report.

Liz- You can use all KINDS of fruit in this thing. (though I do NOT recomment pineapple.) Fresh and frozen work as well as canned does. I even made it without fruit once, and just upped the amount of cinnamon. Yum!

Hi, I'm another of Lesley's sister-in-laws. This recipe is so good. I love to make it for dinner...who doesn't love breakfast for dinner. I love to pour some milk or cream over it. It's so good that way. Plus, I'm with Megan the sides are the best part.

Oh, if you want to lessen the fat you can use less butter, but be warned it will have a tendency to stick to the sides of your pan.

Yeah, the recipe above is doubled, except for the butter. It still works with only half the butter. I have always made it that way.

Once I doubled the butter, and Scott exclaimed that it was my best batch yet. I didn't confess why.

this is so funny because I remember many a morning when that hugmongous pan of stuff would come out of the oven to a room full of groans. I too love the buttery edges with milk poured over the top!
