Recipe Review

Thank you, thank you to Missy for her Lentils and Potatoes with Curry. I've been retaining a lot of water lately (TMI, I know...sorry) and I know lentils are a good diuretic. So, in my search for good lentil recipes, I found Missy's. It was so, so, so delicious.

And do you know what's also delicious??? Missy's Apple-Raisin Muffins. Wow.

Two Reviews

I'd like to give two enthusiastic thumb-ups to both Canneloni and Chicken Gyros.  Both were excellent and will be added to our rotations!  The canneloni was quite possibly the easiest thing I have ever made, and the yogurt sauce that goes with the gyros is my new favorite dip.  YUM.

Thanks!

Two Reviews

Three enthusiastic thumbs up for Chicken Gyros and Honey Curry Chicken.

My three year-old ate both of them voraciously, as did my husband. They'll definitely be added to our dinner rotations!!!!

Thanks for posting!

Review: Great Harvest Breakfast Casserole

Described tonight as "candy for dinner," my family LOVED this, Liz. Thanks for sharing! I didn't have time to let the bread soak for 8 hours (that was me not planning ahead), but it still turned out really well. MMMMM.

As a side-benefit, I took the leftover sauce and cooked it further to make caramels. Also MMM.

REVIEW: Zucchini Yogurt Multigrain Muffins

SO GOOD. So moist and super yummy, even the next day. Plus Connor loves them, and he hates almost all vegetables. Very healthy as well - lots of protein and fiber.

Thanks, Slish!

White Chicken Chili--Review

The White Chicken Chili recipe posted by "JackJen" is so delicious. And totally easy. I used the pre-cooked chicken breast strips by Kirkland Signature (Costco refrig. section) instead of cooking up the chicken myself. So much of the recipe is open up a can and dump it in. For next time, I would maybe not add the cayenne or as much as the chilies. It wasn't too hot for me (and I am a total wuss), but my two year old thought it was a little spicy.
And the best part of any recipe--there are leftovers and I thought the chili was better a few days later. Oh, and I dumped in some leftover corn after the first night--still delish!
Yummy! Thanks for sharing.

REVIEW: Albacore Enchiladas

Remember when Liz posted these?

Yeah---the leftovers are sitting in tupperwares in the fridge, and I'm doing everything in my power to resist eating all of them.

SO SO SO YUMMY.

Thanks for posting, Liz. My two year-old used the word "delicious" for the very first time tonight, and it was on YOUR food!

Deceptively Delicious

Tori asked about this cookbook so here is my opinion. I really, really (see how much) like this cookbook. It has some great recipes in here, plus it made me get into the habit of throwing in some vegi purees into whatever I am making, whether I am using their recipes or my own. And if the idea of steaming, then blending/pureeing your own vegetables is holding you back––buy some baby food and you can throw that in instead. The steaming/blending thing is time consuming but really easy. I get a whole bunch of vegis to do at once and get the job done once my kiddo is sleeping. I have a tupperware container for them to store in my freezer and when I need one for a recipe I usually just throw it in a bag of warm water to defrost on the spot.
Here are some recipe titles (sorry, no time to type them all right now) we have tried and liked, just to give you an idea of what here; there have been none we have not liked.
*French Toast (w/ banana or pineapple or SWEET POTATO or PUMPKIN or carrot or butternut squash puree) plus flax seed
*Scrambled Eggs (w/ cauliflower puree)
*Pancakes (w/ sweet potato puree)
*Blueberry Lemon Muffins (w/ yellow squash)
*Chicken Nuggets (w/ BROCCOLI or spinach or sweet potato or beet puree)
*Mashed Potatoes (w/ cauliflower puree)
*Turkey Burgers (w/ CARROT or cauliflower puree)
*Quesadillas (w/ butternut squash puree)
*Grilled Cheese Sandwiches (w/ SWEET POTATO or BUTTERNUT SQUASH puree)
*Tacos (w/ sweet potato or CARROT or butternut squash puree)
*Chocolate Pudding (w/ avocado) ––let this one cool or else it does like avocado and not choc.
*Frozen Yogurt Pops (w/ berries)
*Chocolate Chip Cookies (w/ chickpeas) ––this has been posted previously

I think the book is totally worth it. Check it out.

Must try these Apple Dumplings!!

Okay, so Pioneer Woman did it again. You all MUST try these Apple Dumplings. Okay, unless you're on a diet or have sworn off sugar (ahem, ahem). They are super easy, made with ingredients you may just have around, and they are A-MAZ-ING! Don't be scared by the Mountain Dew--they're yummy!!

Review: Pulled Roast with Cilantro Sauce

Wow. This was so good. I was rather surprised because Cilantro usually has too strong of a taste for me. This was one I was actually looking forward to leftovers. We had enough left over that I froze half the meat, sauce, and beans for a nice quick and easy meal later. Oh and the sauce is also really good as a veggie dip. Beware though...it does give you garlic breath.

REVIEW: Giant Eclair

I was going to put this in the comments of the recipe, but when this recipe gets 35 people (young and old) to look past everything on the dessert table and fight over the last crumbs, well...kudos to the recipe-giver!

I made this for Thanksgiving, and in a sea of pies, it was the first thing to disappear. Everyone LOVED IT.

Thank you SO much for sharing! This will become a family staple!

REVIEW Again: Curry in a Hurry

I made this again last night. I only used half the curry seasoning (it's all I had) and my 4 year old still said it was too spicy...oh well, what can you do. I used coconut milk instead of the cream. I'm not sure if it was the brand or not, but it wasn't very coconutty. It was still good though.

REVIEW: Impossible Garden Pie

This was SO good and SO easy! I doubled the recipe and used one for a pot-luck. I used broccoli instead of zucchini (what I had on hand) and it turned out really well. Connor actually ate more than I did, which is saying something, since I can't seem to get the kid to eat ANY vegetables. This will definitely be inserted into the regular rotation.

Review: pulled roast with cilantro sauce

YUMMMMY!!! I knew this would be good simply because Corinne has awesome recipes, but hello! I don't even like cilantro and I absolutely LOVE this. I have eaten it every day since I made it. I must confess that I carmelized the inside of my crockpot because the roast I used wasn't fatty enough, but hey, it was still really good. Keep them coming please.

Review: And it STILL turned out great!

I have been wanting to make Lisa's Spinich Calzones since she won the bloscar. And I agree--they really are that good. Unfortunately I left out the Italian seasoning it called for, and didn't realize this until they were all wrapped up and ready to pop in the oven. So I sprinkled the seasoning over the buttered tops, and then topped that with fresh parmasean. They were so good! They look fancy, too.
Scott insisted that these are a breakfast food. (He got hung up on the egg in them, I think.) Breakfast food or not, we really like them. Thanks, Lisa!

REVIEW: Ricotta Filling/P-Dub Lasagna

So I've never been a huge fan of the cottage-cheese-in-lasagna thing, so I decided to make P-Dub's lasagna with Jen's ricotta filling... EXCELLENT! Sheer genius! The cream cheese adds so much creaminess and great texture. Also, I used shredded parmesan on the top instead of grated (that's all I had) and it turned out fantastically. I think this will be the recipe I use from now on. THANKS!

REVIEW: Tofu Breakfast Burritos

This has been a Telestial Kitchen recipe week. I made these Tuesday night for dinner. (We love breakfast for dinner). I was pleasantly surprised. The were pretty good. My hubby, Chris, liked them and he was pretty skeptical. My kids didn't quite care for them. They said they were too spicy. But, pretty much if you put any spices on their food it is too spicy.

REVIEW: Crockpot Enchilladas

Whoa baby. These are so easy and SO good.

They take a fraction of the time and mess of "real" enchilladas, and you don't have to fret over rolling enchilladas and having the tortilla crack down the middle before you even put it in the pan. Okay, I don't really fret over that, but it does annoy me. And in this recipe, you just layer them! So easy.

Scott and I loved these. Great flavor. All you do is brown the meat. (I used ground turkey) The rest is just opening cans, stiring and layering. Definately adding this to my regular rotation.

my first review: chicken roll-ups

while we're reviewing, i'll mention that i made the "gourmet chicken roll-ups" and they were very good! i am not good at making things with chicken (i've only been eating it for a year and a half, since i've been pregnant/nursing; before that i was a strict vegetarian since age 10, so i never learned to cook chicken). and i'm very picky about it. but this recipe was super-easy and the sour cream made the chicken tender and subtly-flavored. and i loved the stuffing on top (i don't think i crushed it as finely as i was intended to, but it worked for me).

"subtly-flavored." ha. i should be a food writer.

Review of Curry in a Hurry

Yummy, Yummy, Yummy!!!! This was really easy to make and really good. My little girl, Sophie even liked it...of course she had to pick out the onions. Lesley wasn't kidding about your house smelling like curry for a long time. I've got my air freshener on high to try to get rid of the smell. The next time I make this however I am going to use coconut milk instead of the cream. Yum.
