Radish Dip

So, this is the second week of our CSA (crop share association), and this is the second week that we've had an inordinate amount of radishes in our share.

I'm not really a fan of radishes.

But my friend clued me into this dip, and I'm thrilled about it.

1 (8 oz.) pkg cream cheese
8-12 radishes, washed and chopped in half
3/4 - 1 t. salt

Optional ingredients:
dill
garlic

1. Put radishes in a food processor and pulse until radishes are in teeny-tiny pieces....think crushed candy canes...it'll look similar. =)

2. In a bowl, mix the radishes with the cream cheese and salt (and optional ingredients, if you like) with a spoon or stand mixer.

Serve with tortilla chips, celery, cucumber....really, it's all delicious.

1 brownie mix 9×13 inch size
18 Candy Cane Hershey Kisses
1/2 Cup chocolate chips
2 Tablespoons heavy cream
3 original candy canes, crushed
1. Preheat oven to 350 degrees F. Prepare brownie mix according to package directions and scoop into a mini cheesecake pan or mini muffin tin pan that has been generously sprayed with cooking spray, about 3/4 way full. Press kisses into center of brownie batter, do not push all the way to bottom, some of the tip should stick out the top. Bake for 20-23 minutes or until brownies are cooked through. Let cool completely.
2. Melt chocolate chips in microwave, 30 second intervals until smooth and melted. Stir in cream until silky smooth. You can place back in microwave for 10 seconds to smooth more if needed. Dip tops of brownies into melted chocolate, then sprinkle with crushed candy canes. Serve with a tall glass of milk. Enjoy!!

**Note** I ended up making way more than 18 using this recipe, thus way more (36) kisses; I would recommend having more Hershey kisses on hand than the 18 the recipe calls for.
**Note**Comments from from the original post said a lot of people had problems with the brownies sticking to the pan. I used Crisco cooking spray with flour and had zero problems. Even when I substituted caramel filled kisses for the candy cane ones.
**Note**I didn't have heavy cream, so I used 1% milk. Worked fine.

Halloween Offerings

Hey all-I've got a few festive and fun Halloween dinners to offer. I'm not sure which I'm going to make tomorrow, but I thought I'd post this today in case anyone's trying to be a cool mom on Halloween. :)

*Oh, disclaimer-these are not intended to be healthy or gourmet in any way. They are intended to win you cool points with your kids, and not be too hard or time consuming to make. You'll be doing other things-painting faces, finding that elusive sword, repositioning the tiara... Ok. Here we go.

Mummy Dogs

  • Some kind of good hot dog or sausage-brat, whatever you like that comes in a general hot dog shape
  • 1 can of refrigerated bread sticks

You can see where we're heading with this-take the breadstick and wrap the lower 2/3 of the hot dog, then leave a space and wrap up the top for his little mummy turban. Bake according to the directions on the bread sticks. When they come out, dot a little ketchup or mustard for the eyes and you're set.





Trick or Treat Turnovers

  • 1 lb ground beef
  • 1/2 onion
  • 1 can cheddar cheese soup
  • 2-3 Tbs ketchup
  • Cheese
  • 2 cans refrigerated biscuits

Brown beef with onion and drain. Add soup and ketchup-simmer. Meanwhile, take refrigerated biscuits and flatten. Take your knife and carve out simple pumpkin faces in half of the biscuits. Place some of the meat mixture on the non-carved half, then put cheese on top. Gently place a carved face over the top and pinch edges to seal. If you want to get really tricksy, you can nip out a bit of the biscuit and make a stem at the top. Bake according to the biscuit directions.

Zucchini Cakes

I am talking Zuchinni Cakes like crab cakes, not zuchinni cake like carrot cake. You know what I'm saying? I know a lot of us follow P-Dub's blog, so some of you maybe have already tried these...but, if you haven't, give them a try. This recipe is so easy to make and really good! Virgin Mint Julep

My sister in-law, Shara, gave me her AMAZING recipe for this drink. And not only is she a real born-and-bred Southern girl, but she's also a KENTUCKY girl--so she knows her mint juleps. I personally tasted this when I was down there two weeks ago, and I can attest: it'll brighten up ANY party!

Virgin Mint Julep

4-5 mint sprigs
1 1/2 cups sugar
2 cups cold water
3/4 cup lemon juice
1/4 cup pineapple juice
1 1/2 qt ginger ale
Thinly-sliced lemon slices (for garnish)

Rinse the mint and discard the stems. Place sugar, water lemon juice, pineapple juice in a medium-sized bowl, mix, and stir in the mint leaves. Allow to stand for 30 minutes.

Fill a large pitcher with ice cubes. Strain the liquid over the ice. Add the ginger ale and lemon slices and serve. Definitely a Southern party favorite! Thanks, Shara!

Mini Onion Quiches

A Paula Deen recipe...they were pretty yummy. I used mozzarella cheese instead of Swiss.

3/4 cup crushed saltine crackers
4 tablespoons (1/2 stick) butter, melted
Nonstick cooking spray
1 cup chopped green onion with tops
2 tablespoons butter
2 eggs
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grated Swiss cheese

Preheat oven to 300 degrees F.

Combine cracker crumbs and melted butter. Divide crumbs among mini muffin tins that have been sprayed with a nonstick cooking spray. Saute onion for 10 minutes in 2 tablespoons butter. Cool, then divide evenly on top of cracker crumbs. Beat eggs; add milk, salt, pepper, and Swiss cheese. Pour by spoonfuls on top of onions in tins. Do not fill to top, as they will run over. Bake until set, about 15 to 20 minutes. Do not over bake. May be stored in refrigerator or freezer. Warm in oven before serving.

So-Easy Sparkling Cider

I love Martinelli's sparkling cider at the holidays, but it's expensive, especially if you have a big group. Here is my own recipe for a large quantity of sparkling cider on the cheap.

Ingredients
club soda (wait til it goes on sale for $1 a bottle or less)
frozen apple juice concentrate
tap water

Basically, you just mix it like it says on the apple juice can, but replace 2/3 of the water with club soda. So if it calls for 3 cans of water, use 2 cans of club soda and one can of tap water.

Southern Made Cheese Ball

Every time I make this, I get rabid requests for the recipe. It's a holiday favorite of mine too. (Also, to give credit where credit is due, I got this recipe from allrecipes.com)

INGREDIENTS
3 (8 ounce) packages cream cheese, softened (I use 2 bricks ofNeufchatel--see note)
1 tablespoon Worcestershire sauce
1 tablespoon onion powder
1 tablespoon garlic powder (not garlic salt)
1/4 cup chopped green onions
1 tablespoon chili powder
1 tablespoon Creole-style seasoning (shop for one that is not super high in sodium)
1 cup shredded Cheddar cheese
1 cup diced cooked ham (I am a vegetarian, so I have always left this out)
1 tablespoon creamy salad dressing, e.g. Miracle Whip ™
Topping to roll cheeseball in--chopped pecans, grated cheese

DIRECTIONS
In a large bowl, mix by hand, cream cheese, Worcestershire sauce, onion powder, garlic powder, green onions, chili powder, Creole-style seasoning, Cheddar cheese, ham and creamy salad dressing. Form the mixture into one or more balls. Roll in topping if desired. Chill in the refrigerator at least 1 hour before serving.

Note: Neufchatel cheese is often sold by the bricks of cream cheese. It tastes absolutely the same but is 1/3 the fat. And it doesn't have the weird texture of low-fat cream cheese, either. But I usually make this recipe with 2 bricks Neufchatel, and 1 brick regular cream cheese, just in case.

Fried Bananas (like at P.F. Changs)

One of the only things I could make when Scott married me. Definately worth knowing how to do. Great party food.

Ingredients
Bananas
Vegetable Oil (several cups)
Lumpia / Egg roll Dough (find in the refrig. produce area)
Fudge sauce or Hershey's syrup
Vanilla / Coconut ice cream
Deep skillet or Pot
Metal tongs


Here is the step-by-step, Pioneer Woman style.

Slice bananas. Cut the Lumpia in half, "hot dog way". (i.e. the skinny way.) Place the banana on one of the halves.


Fold the sides in, and crease them. Fold one end down, like you were wrapping a present.

Starting with the folded end, roll the banana up in the Lumpia. Make it tight.

Put a dab of water on the end before you press it into the roll. The water will act like glue. Fill a deep skillet with oil, until half the banana roll will be covered with oil. Heat to Med. Low. When a drop of of water sizzles when tossed into oil, place several banana rolls into the oil, standing up. Fry approx. 3 minutes, then flip so raw side is in oil. Flip back and forth every few minutes until golden brown. Serve hot, arranged around a scoop of ice cream, and covered with chocolate.
