Request: Cooked Ham Recipes

Ok ladies. I've got left-over Easter ham. Buckets of it. My in-laws bought a HUGE ham and then left before they even made a dent in it. So, I've already done my two standard cooked ham recipes. What've you got? :)

Oh. And I should say-for those of you who don't know me, which I recognize is most of you, I need something simple right now. Your most gourmet cooked ham recipes won't do for me at the moment. I just had a baby and I've got 2 other kiddos, so something simple and family pleasing would be superb.

Tori's Request

In response to Tori's request, I'm posting six of my favorite tried-and-true vegetarian meals. (Let me know if you want more recipes like these.)

If you want to browse for more vegetarian meal ideas online, I often use these websites: Peggy's Kitchen at the Mothering website, VegCooking, and the Food Network's Vegetarian section.

And to further motivate you in your quest to eat less meat, I really recommend this article by Mark Bittman and this one by Michael Pollan (neither of whom are vegetarians, by the way)... I'm not trying to go all veg-evangelical on you, but I think they're important issues to think about :)

Deceptively Delicious

I know some of you have this cookbook, and I got it for Christmas. Do any of you have favorite recipes? Tips? What vegetables are easiest and most convenient to puree? Is there a good place to start? Am I correct in thinking that I can use pureed vegetables both in the recipes and as baby food?

Any insight would be greatly appreciated.

Flax Seed Meal--not a recipe

I keep a bag of this flax seed meal in my fridge and add it to random things I am baking or as a topping pretty normally (just as a supplement not as a replacement for anything). Today when I was putting it on my toddlers peanut butter/honey sandwich I noticed it said you could replace flax seed meal for oil/butter/margerine (3:1). Has anyone ever tried this? Totally replacing the butter with the flax seed? I tried making these cookies using 1 1/2 cups flax and 1/4 cup butter--I could not not use any butter in cookies (called for 3/4 c. butter). The cookies still tasted alright--definitely not buttery or smooth, but still good. When the oven buzzer went off for the first batch, I opened the oven, looked at the cookies, and thought maybe I had forgot to turn on the oven; the cookies looked exactly like they did when I put them in. So, that was interesting....
(These are cooked! See they didn't melt--no butter--and spread out. They look pretty unappealing, I realize, but taste alright. Thank goodness for chocolate chips!)



So, yeah, back to my question: Have you totally replaced fats with flax seed meal? How did it turn out? Do you have a recipe to share?

**Tangent** I just got a cookie dough scoop and love it! Made dropping the cookie dough super easy to drop and it was fast; I totally recommend getting one if you don't have one already. I got mine at BB&B.

P.S. Thanks for the gluten-free comments. I'm going to make that mexican lasagna...for US! It looks so great--and I'd seen it on an episode of "Everyday Food," so now I know it has good reviews!

Wanted: Gluten-Free

I visit teach a sister in my ward who's whole family (with the exception of 1 of their children) has Celiac Disease.

They've had a lot of needs lately for meals, and I'm pretty sure they're getting tired of chicken and rice and/or mexican food. =)

Any ideas?

(side note: Has anyone ever experimented with rice flour/oat flour/non-gluten flours?)

Telestial Kitchen Shout-Outs

So, while I have been happy to be a member of this blog, I haven't really used it. I've been spoiled living with my dad who loves to cook, and I have let him. But, in the next week or so I'm moving out, and am now in need of some kick-butt recipes. Vegetarian Meatloaf (with lentils) Lentil Log

Note: This is a response to the request for lentil recipes. I actually haven't tried this one yet, but it's on my to-make list. It's a Giada de Laurentiis recipe (credit where credit is due, right?) If anyone else tries it first, let me know how it goes!

Checca Sauce:
1 pint cherry tomatoes (about 2 cups, or 12 ounces), halved
3 scallions (white and pale green parts only), coarsely chopped
3 cloves garlic, chopped
8 fresh basil leaves
3 tablespoons olive oil
Pinch salt
Pinch freshly ground black pepper

Lentil Loaf:
3/4 cup lentils (about 5 ounces)
3 cups reduced-sodium vegetable broth
1 cup uncooked short-grain brown rice, rinsed well
1/2 cup finely chopped white onion
1/2 cup shredded carrots
1 celery rib, sliced
1/2 cup frozen corn kernels
2 tablespoons butter, divided
10 ounces fresh baby spinach leaves (about 4 cups)
1 1/2 cups cubed whole milk mozzarella cheese, divided (about 8 ounces total)
2 eggs, lightly beaten
1/4 cup freshly grated Parmesan cheese, plus 2 tablespoons
1/3 cup chopped fresh basil leaves
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1 tomato, sliced

For the Checca Sauce:

Combine the cherry tomatoes, scallions, garlic, basil, and oil in a processor. Pulse the tomatoes until they are coarsely chopped, being careful not to puree. Set aside. Season the sauce with salt and pepper.

For the Lentil Loaf:

Place the lentils in a large saucepan of cold water. Bring the water just to a boil over high heat. Carefully drain the boiling water and rinse the lentils. Meanwhile, in a heavy large saucepan over medium heat, bring the broth to a boil. Add the rice and return the liquid to a boil. Decrease the heat to low, cover the rice, and gently simmer without stirring for 10 minutes. Stir in the lentils, onion, carrot, and celery. Cover and continue cooking without stirring until the rice and lentils are tender and the liquid is absorbed, about 30 minutes longer. Turn off the heat. Sprinkle the corn over the rice and lentils and let stand, covered, for 5 minutes. Uncover and fluff the rice with a fork. Cover and let stand for 5 more minutes.

Meanwhile, preheat the oven to 350 degrees F.

Spread 1 tablespoon of the butter over a 10 by 4 1/2 by 3-inch loaf pan. In a heavy, large skillet, cook the spinach over medium heat until the spinach wilts, about 3 minutes. Drain and squeeze the excess liquid from the spinach. Transfer the spinach to a work surface and coarsely chop.

In a large bowl, gently mix the lentil mixture, spinach, 1 cup of the mozzarella cheese, eggs, 1/4 cup of Parmesan cheese, basil, salt, pepper, and half of the checca sauce. Spoon the mixture into the prepared pan. Arrange the sliced tomatoes in a row over the lentil mixture. Sprinkle with the remaining 1/2 cup of mozzarella cheese and 2 tablespoons of Parmesan cheese. Dot the top with the remaining 1 tablespoon of butter.

Bake uncovered until the loaf is heated through and the topping is melted and starting to brown, about 30 minutes. Let cool for 15 minutes. Slice the loaf into 2-inch slices, arrange on plates, and serve with the remaining checca sauce.

A Mere Curiosity

This is random. But I'm curious about blog members' responses to this question: What are the ingredients that you can't live without? I'm referring to those ingredients that you use in nearly all your recipes, so important to your kitchen functioning that, if they ceased to exist, your family would starve and your shelves would be bare?

(For example, my crucial ingredients are rice, tofu, canned tomatoes (fire-roasted or basil and oregano), soy sauce, whole wheat pasta, black beans, canned corn, olive oil, adobo (Goya brand), and brownie mix.)

Cranberry Pecan Pie

Filling:
3 eggs
1 c. corn syrup
2/3 c. sugar
1/4 c. butter, melted
1 tsp. vanilla

2 c. fresh cranberries
1 c. chopped pecans

Prepare pastry in a 9" pie plate. Heat oven to 425 degrees. Mix filling (1st five ingredients) well, add cranberries and pecans and stir until coated. Pour into shell. Bake 10 min. at 425 degrees, then 38 min. at 350 degrees. Cool and refrigerate.

Request: Vegetable Side Dishes/Veggies

I am so bad at feeding my family veggies. Either I made a green salad (which my kids won't eat) or I just pop some frozen veggies into the microwave. Does anyone have any ideas of how to get more veggies into my kids in more varied ways? Thanks.

Veggie Beef Barley Soup

A dish with lot of veggies was requested and I have wanted to post this anyway. Yummy, healthy soup that is great for cold days! The amounts are all approximations/ guesses. Sorry it is an odd recipe format. Make it according to your taste!


This is what I made the other night. I used a medium/ large pot and it made about 6 servings.



Ingredients:
About 1/2 c. dry barley (or rice if you prefer)
1/2-1 lb. ground beef (optional)
1 can beef broth
1-2 cans (or more) water
1-2 carrots, chopped
2 med. potatoes, diced
Zucchini
Yellow squash
1 can tomatoes
1/2 cup frozen corn (or corn cut off the cob is delicious!!)
Chopped onion
Basil to taste
Thyme to taste
Salt/ Pepper to taste

First, cook some barley according to directions. I cooked about 1/2 c. of barley in 1 1/2 c. water. This takes awhile- about 45 min. for me.

Brown beef in a med./ large pot. Add all other ingredients and bring to a boil. Reduce heat and simmer until carrots and potatoes are soft. Add barley when the barley is soft and cooked. Serve with bread. I will also brown the meat and stick it in a crock pot, add all other ingredients and leave on high for a couple hours. Yummy!

English Toffee

A recipe from my sister-in-law Rynell. This is a Andersen family Christmas favorite- Christmas is not Christmas with out these. I hope it is what you are looking for!

Toffee:
1 lb. real butter (sweet cream or unsalted)
2 c. white sugar

For Topping:
2 regular size Hershey milk chocolate bars or 1 bag milk chocolate chips
1 cup finely chopped almonds or pecans

1. Butter a heavy cookie sheet. (I use a jellyroll pan.)
2. Put butter and sugar in a heavy saucepan over medium heat. Bring to a boil, stirring constantly. Keep stirring as butter melts and mixes with sugar. Keep Stirring! Stir until the mixture turns the color of peanut butter. (I actually get a jar of peanut butter out to compare colors.)
3. Carefully pour hot toffee out onto buttered cookie sheet. Use the back of a spoon to spread if needed. (At this point, put the sauce pan in the sink and fill with hot soapy water for easier clean up.)
4. Let mixture sit for about 3-5 minutes or until you finger doesn't leave an impression in the toffee. Put chocolate on very warm toffee. Once the chocolate is shiny, the chocolate is ready to spread. Spread it with the back of a spoon or a rubber spatula.
5. Sprinkle nuts over melted chocolate. Put in fridge for 30 minutes to an hour.
6. Take toffee out of fridge. Crack the toffee into servings by sliding a knife under it and also by using a heavy knife to break it up. Enjoy!

I would like a recipe for Toffee. And Peanut Brittle if you have that to. I know they can be found online, but I have been very impressed with you fellow TK bloggers and would rather use your family recipe instead... hope it's out there! Thanks!
