Creamy Chicken Lasagna

So I got this recipe from my Relief Society; they asked for volunteers to make it for a night that we do dinner at the local soup kitchen. It's the kind of excessively creamy recipe I normally try to avoid because of its astronomical caloric contribution, but since it was for charity: I made it. I also made an extra one for us (I used all fat-free and "healthy request" products trying to cut the fat a little bit). To my chagrin, it was quite delicious and my husband had thirds. Man. I hate being reminded that sometimes unhealthiness is super-yummy.

(The recipe format is weird; this is how I received it.)


Cook until done:
3 whole chicken breasts (then cut up)
9 lasagna noodles

Mix together:
1 can cream of chicken soup
1 can cream of mushroom soup
2/3 c. milk
8 oz. cream cheese
1 pint sour cream
1 tsp. poultry seasoning

Add to sauce:
the chicken breasts

Also get ready:
1/2 lb. shredded mozzarella cheese
Breadcrumbs

Layer in a 9 x 13 pan:
Noodles on bottom
Sauce, chicken and cheese
Repeat layers
Breadcrumbs

Bake at 375 degrees for at least 30 minutes.

Big hit at my house! The girls don't eat lasagna noodles so I simpy substituted tri-colored rigatoni (that way you can sneak in some chopped veggies and they don't notice as much either). I think I would reduce the amount of sour cream and leave out the crm. of mushroom soup too. I used reduced fat everything and it was still really creamy. Everyone gobbled it up. This will definately join our arsenal, even if our arteries can afford it once in a while :)

Whoa. I could sing praises to this recipe ALL day.

I added chopped frozen broccoli, and put crushed stuffing mix on top. I also used the oven-bake lasagna noodles that you don't pre-cook.

We added chopped broccoli too! Did you know you don't have to buy special noodles for that? I will have to send you the instructions for how to do it.

that's funny, the whole time i was eating it i was thinking "i wish i'd put some chopped broccoli in this..." :)

i'm thinking about trying it again and substituting silken tofu for some of the creamy stuff. i'll let you know how it comes out.

I made this tonight and it was FABULOUS (despite the fact that my lasagna noodles are terrible... stupid store brand). I added a package of sliced mushrooms AND the frozen chopped spinach - delish. Next time I might be tempted to just use wheat penne (thus pretending it's healthy) and make it into a full-blown casserole.

I made this last night....WOW. It was amazing. I think it would be good with egg noodles, too. I made this for some company that came over for dinner--They loved it! Thirds were had! Thanks for this! I think I'll definitely try it with lowfat or fat free ingredients!
