Request: Meatless/Vegetarian Meals

I have decided that my family needs to eat a lot less meat, but I don't have a lot of meatless recipes. I've found several here that I want to try, but I would like more. Can anyone help me with this? Thanks.

I thought the SAME THING too, about a year ago. We love homemade veggie burgers (I'm pretty sure I posted the recipe on this site), but I'd also say don't discount chicken. =) In a year, we've been able to phase out all red meat (it's just not worth it to me...it has too much *baggage*) =), and we rarely eat pork. Chicken, though, can be quite low-fat and low in calories, if you keep the serving size small. Between my husband, my 3 year-old and myself, we only eat 1 chicken breast. Good luck!

We like meat too much to totally get rid of it, but I really want to cut it down to 2-3 days a week as opposed to the 5-6 days we currently have meat. How have you felt since you cut out most of your meat?

my favorite vegetarian cookbook is "how to cook everything vegetarian" by mark bittman. it is literally a TOME--it's massive and full of really great and easy recipes that don't require too many unusual ingredients. if you don't have the budget to buy it right now, you could always check it out from your library and see what you think. (if the library doesn't have it, they can probably request it on interlibrary loan for you.)

i will try to post some veg recipes on here too. maybe i'll find a spare couple of minutes later today :)
